Smokey Pork Chops & Sweet Potatoes

Per serving: 411 calories, 39g carbs, 13g fat, 39g protein

Serves 4

  • ​24oz frozen, diced sweet potatoes
  • ​2 tbsp olive or avocado oil
  • ​1 tbsp smoked paprika
  • ​¾ tsp cinnamon
  • ​Salt & black pepper to taste
  • ​1.5lbs boneless thick cut pork chops**
  • ​2 tbsp raw honey
  • ​1 tbsp Dijon mustard
  • ​1 tbsp apple cider vinegar
  • ​½ tsp liquid smoke (optional)

Serves 8

  • ​48oz frozen, diced sweet potatoes
  • ​¼ cup olive or avocado oil
  • ​2 tbsp smoked paprika
  • ​1.5 tsp cinnamon
  • ​Salt & black pepper to taste
  • ​3lbs boneless thick cut pork chops**
  • ​¼ cup raw honey
  • ​2 tbsp Dijon mustard
  • ​2 tbsp apple cider vinegar
  • ​1 tsp liquid smoke (optional)

DIRECTIONS: Combine everything in a large freezer bag, seal, shake well, and freeze flat till needed.

SLOW COOKER: *NOT RECOMMENDED*

OVEN: Spread everything on a sheet pan and defrost fully. Preheat the oven to 400 degrees. Place the pan in the oven for 20-25 minutes. Remove pork chops to a plate and cover with foil to rest. Flip sweet potatoes and roast 10-15 minutes longer.

Serve with a big salad

**You can make this vegetarian by substituting 2 cans of chickpeas for every pound of pork
